Stuck for Inspiration this Christmas? Here are Salmon Recipes for Every Festive Occasion

For many of us, it wouldn’t be Christmas without salmon. Christmas is certainly a time of traditions – and arguing whose family tradition is best – but what if you love salmon as a festive treat but want to try it in a new way, or impress guests with a new dish? Or maybe you don’t usually eat salmon at Christmas but you’re keen to give it a go – where to begin?

Don’t worry – the elves at ASC have chosen some recipes that should suit any occasion, whether you’re looking for a tasty meal that’s a lighter alternative to meat, or hoping to win over those hard-to-impress in-laws with a fine dining experience.

And if you’re also wondering which salmon to buy, well we can help with that too. Santa may have his list of who’s been naughty and nice, but we’ve gone one better: the ASC Salmon Standard includes over 100 strict environmental and social requirements for fish farmers, and all certified farms have been thoroughly audited by third party independent organisations called Conformity Assessment Bodies (CABs). All that means that if you spot the ASC logo on a pack of salmon, you can rest assured that it was farmed in a responsible manner, with minimal environmental impacts by workers who are paid and treated fairly. So when you treat your friends and family to some delicious festive salmon you can reward responsible farmers at the same time. Happy Christmas!

Impress the guests with poached salmon, beetroot, salmon caviar and sweet potato crisps

This is one of those great dishes that looks like it must have been much harder to prepare than it actually is – perfect if you’re looking to score some brownie points this Christmas (anything to avoid doing the washing up, right?)

The poached salmon is paired with crispy sweet potato and a delicious creamy sauce. If you want to push the boat out you can even add salmon roe for a real Christmas treat.

Great for leftovers: salmon croquettes

This is a delicious lunch or starter in its own right, but it’s also a great way to use up any leftover potatoes and salmon (or pretty much any other fish) in the days following Christmas. As simple as they are delicious, they can also be prepared in advance and reheated later.

Nice and simple: papillote of salmon and vegetables

Papillote comes from the French en papillote, meaning ‘enveloped in paper’ (and is sometimes known as the Italian al cartoccio) And that’s why this dish is so simple – all you need to do is put the ingredients in greaseproof paper (or foil) and stick it in the oven. Perfect when you’ve got a thousand other things to get ready for Christmas!
