Pangasius fillet with spinach filled pasta rolls

- 4 pangasius fillets
- 2 tbsp flour
- 2 tbsp butter
- 2 tbsp cooking oil
- Spinach-filled pasta rolls:
- 4 lasagne sheets (fresh or pre-cooked)
- 1 onion (peeled and chopped)
- 200g spinach
- 2 tbsp pine nuts
- 2 tbsp butter
- 200g cheddar cheese (grated)
- salt and pepper

- Make the Spinach-filled pasta rolls first.
- Fry the onion and spinach slowly in the butter. Add the pine nuts and salt and pepper.
- Add one scoop of spinach mixture to each lasagne sheet. Roll up the sheets into rolls and place them on a greased baking dish. Sprinkle the grated cheese on top and bake for about 10 minutes at 175 °C.
- While the rolls are cooking, dip the fish in the flour, then fry until golden brown in butter and oil. Serve on top of the roles.
