Salmon and Pea Tagliatelle

- 3-4 salmon fillets
- 400g tagliatelle
- 1 onion
- 2 garlic cloves
- 100g peas
- Zest and juice of a lemon
- 300g of crème fraiche
- Chopped parsley

Serves: 4 Prep: 30 minutes- Put approx. 400g tagliatelle on to cook according to packet instructions. When cooked, drain and keep 50ml or so of the pasta water
- Dice an onion and cook on a low heat in a splash of oil. 3 mins later add 2 chopped garlic cloves, 100g peas and the zest and juice of a lemon. Stir in 300g of crème fraiche
- Season then pan fry 3-4 salmon fillets in a spoonful of oil for around 8 mins turning once (or oven bake for 12 mins at 180.
- Add the tagliatelle and pasta water to the pan and mix well. Stir through some chopped parsley then flake the salmon and top the pasta with it.
