Salmon croquettes

- 4 x 125g salmon fillets (skinless and boneless – cooked and flaked)
- 500g potatoes (boiled)
- 25g butter
- 1 tbsp milk
- 1 tbsp parsley (chopped)
- 1 tbsp oil
- zest of 1 lemon
- Nutmeg (to taste)
- parsley (for garnish)
- salt and pepper
Easy
Prep: 35 minutes
- Mash the potatoes with a fork. Add the butter, milk, lemon zest, salt, pepper and nutmeg.
- Add the salmon and chopped parsley to the mash, mix together then roll into small croquettes.
- Panfry the croquettes in oil for 5 minutes until golden brown. Keep warm in a hot oven. Serve with a fresh salad.
