Smoked salmon and goats cheese crostini

- 100ml cider vinegar
- 1 tbsp honey
- ¼ tsp sea salt
- 1 red onion, finely sliced
- 1 baguette, cut into 1cm slices
- 2 tbsp olive oil
- Sea salt and freshly ground black pepper
- 200g soft goat’s cheese
- 200g smoked salmon, cut into strips
- 2 tbsp finely chopped chives

Serves: 20- Preheat the oven to 180°C, 160°C fan, gas mark 4.
- Pour the vinegar, honey and salt into a saucepan and bring to a simmer.
- Pour over the red onion, stir well then cover and set aside for 10 minutes.
- Place the slices of baguette onto a baking sheet, drizzle with olive oil and season with salt and black pepper.
- Place in the oven for 8-10 minutes until golden brown and crispy.
- Remove and allow to cool slightly.
- Top each piece with a little goat’s cheese and smoked salmon.
- Spoon the picked red onions over the top.
- Finish with the chives and a little freshly ground black pepper.
