Swedish Sandwich cake

- 2 loafs of sliced sandwich bread
- 250 g red cabbage
- 2 green apples (granny smith)
- 2 tbsp mayonnaise
- 3 tbsp crème fraiche
- Salt and pepper
- 600g ASC labeled smoked salmon
- 1 ½ tbsp mayonnaise
- 1 tbsp Turkish/Greek yogurt
- 4 teaspoons of Japanese soy
- 3 tablespoons liquid honey
- 2 tsp sesame oil
- ½ pot coriander (or parsley if you don't like coriander)
- 1 avocado
- Juice from 2 limes
- 4 sheets of rice paper
- Shrimps: as many as you like
- 4-6 eggs
- Pickled radishes
- Chili mayonnaise
- Pea sprouts
- Crispy lettuce
- 0.75 tbsp sriracha

Serves: 4Sandwich cake? What is that?? It is exactly what it sounds like, a savory cake! It is a classic Swedish dish, and it is usually served at festive events. Swedes can expect it at every graduation party, name giving party or bigger family gathering of any sort. This recipe is a bit of a twist in the classic version. Enjoy! Chop the red cabbage finely into chewable pieces in a food processor or grate it. Peel and grate the apples. Squeeze out the excess liquid to prevent the bread from getting too wet. Mix the red cabbage with the apples, mayonnaise and crème fraiche. Salt and pepper to taste.
Shred the smoked salmon with two forks. Remove any bones. Mix with mayo, yoghurt, honey, sriracha, soy and sesame oil.
Blend the coriander, avocado and lime in a blender until smooth. Mix with mayo and crème fraiche.
Cut off the crust of the sandwich bread (save the crust, they can be dried and mixed to breadcrumbs) and lay the slices edge to edge into the size of the first layer, alternate the red cabbage and smoked salmon mixture in four layers. Top with the avocado mixture.
Cut the rice paper into smaller pieces and fry in heated oil (approx. 180 degrees). Garnish the cake with prawns, eggs, pickled radishes and chili mayonnaise. Enjoy!
