Green goddess salmon pasta salad

- 2 x 125g ASC labelled portions of smoked salmon
- 400g pasta
- 1 ripe avocado
- 200ml Greek or Turkish yoghurt
- 1 garlic clove, grated
- 1 tbsp freshly squeezed lemon juice
- 2 tbsp finely grated lemon zest
- 65g spinach
- 20g basil leaves
- 10g parsley
- Salt and black pepper

Serves: 4 Cooking time: 15 minutes- Cook the pasta in salted water. Drain and quickly rinse under cold water to cool.
- Scoop out the avocado. Blend the avocado, yoghurt, garlic, lemon juice, lemon zest, spinach, half the basil, parsley, ½ tsp salt, and ½ tsp black pepper using a stick blender or food processor until smooth and creamy.
- Combine the pasta with the dressing and season to taste with salt and pepper. Top with the smoked salmon and the remaining basil.
