Miso Soy Salmon

- 2 ASC labelled salmon fillets
- 1 tsp miso paste
- 4 tbsp soy sauce
- Juice of half lime
- 1 tbsp runny honey
- 3 spring onions
- Half a red chilli
- A teaspoon of sesame seeds
- Thai sticky rice and pea shoots or other leafy greens

Serves: 2 Prep: 20 minutes- Season salmon with salt. Heat olive oil and butter to a pan over medium heat.
- Cook the salmon fillet skin side down until a good colour develops (about 5 mins) then turn and cook for a few more minutes. Grilling or baking also works well.
- Heat a pan over medium heat. Combine soy sauce, finely chopped ginger, garlic, honey, miso paste and lime juice. Reduce mixture to a sticky glaze.
- Place the cooked salmon into the glaze in the pan and baste for about a minute.
- Remove pan from the heat and plate up your salmon. Drizzle more glaze over the salmon and garnish with thinly sliced chilli, spring onion and sesame seeds.
- Serve with sticky rice and greens – enjoy!
