Pan fried sea bream with watermelon Greek salad

Easy

A delightful contrast of warm crispy-skinned sea bream with a fresh and cool watermelon salad. We love this super simple sea bream recipe and with a cook time of less than 30 minutes, this almost effortless meal makes a quick and flavoursome light dinner or lunch.  

  1. Pour the extra virgin olive oil into a large bowl. Add the honey, lemon zest and juice and season with salt and black pepper then whisk to combine.  
  2. Add the watermelon, red onion, parsley and mint leaves and toss to coat in the dressing. Add the feta and toss once more, very gently, then set aside while you cook the fish.  
  3. Heat a large frying pan until medium hot. Add half the oil and place half the sea bream fillets into the pan, skin side down and press down very gently. Fry for 21⁄2 -3 minutes on the skin side until just crispy and golden, then flip over and cook for another 1-2 minutes until the fish is just cooked through. Remove and repeat with the remaining oil and fish.  
  4. Serve the fillets alongside the watermelon Greek salad.
